There is this one magical food everyone looks forward to when coming back to Foley every summer… Soda Bread!
This magical bread is similar to a coffee cake but hard to describe unless you’ve experienced it yourself. We have soda bread twice in every 3 week session. On the morning of the first sleep in morning at camp, and then again on the last full day of camp when the Alpha games take place. It is always a wonderful thing waking up to camp on a soda bread morning and smelling the fresh baked bread and cinnamon crust smells on the air.
We wanted to give you all the chance to try out the recipe!
Many campers have tried to replicate the camp recipe over the years, many saying it doesn’t taste QUITE the same, but is still delicious. There must be something about the camp ovens or pans that make our soda just a little extra special. If you make Soda Bread at home, make sure to send us pictures and a full review! Ingredients
4 cups flour
1 1/2 tbsp baking powder
1 1/8 cups sugar
1 1/2 tsp salt
2 eggs
1 1/2 cup milk or buttermilk
1 cup lard
Directions
Mix all ingredients together.
Sprinkle with cinnamon and sugar.
Pour into a 8 1/2″ X 11″ cake pan.
Refrigerate overnight. (Very important!)
Bake at 350 for 40 minutes.
